Can't wait to meet our student mentor

My partner and I are really trying to be healthy - BUT it always seems like you eat the same thing...salad = veggies, sandwich w/ a side of veggies, snack = veggies or fruit, dinner = veggies w/ protein...
I'm trying to think of what to make for dinner & all that keeps going through my head is, NO MORE VEGGIES!
If anyone has any good recipes for veggies, I would love some suggestions! This is my downfall, making sure to eat right. How do you make vegetables fun?We have been in touch with our student mentor, who we are looking to meet this Friday. Until then, we can use any help you are willing to offer :)

  1. I use a lot of Lean Cuisine/Healthy Choice type foods. I heat them up according to the directions, but I'll also cook some frozen broccoli, cauliflower or beans & mix them in with the entree (maybe chicken alfredo with broccoli or asian beef with green beans). That way, you're getting a bigger meal, you're adding more vegetables to your diet, but you also get to cover the veggies in some kind of sauce so they taste really good.

    Start a 'salad' by tearing up leaves of romaine into small bite size pieces, then use your imagination. Put some frozen/or can small peas,(or anything veggie that comes in a can/bag)
    add a diced tomato, sliver a little fresh carrot, or sweet potato, green/red/yellow bell peppers, can even top with fish, tuna, chicken or cut up turkey. Add a few grapes, or blackberries, raisins. GO Wild! Sprinkle with sliced almonds, and ever so lightly with the dressing (just enough that you can recognize it's there, but don't drown it)and you have more than you can eat.
